蒸猪腰的家常做法
蒸猪腰,汤汁清淡,肉质脆嫩 。
【蒸猪腰的家常做法】选腰子时 , 要看其颜色:新鲜的腰子柔润光泽,有弹性,呈浅红色;将买回的猪腰浸泡于水去掉外表的薄膜和血水 。
将猪腰子对半剖开,剔去白色筋 。这一步也可是在买猪肉档处让老板帮忙剔掉 。
用刀将猪腰要成细条,备用 。
将切成细丝的猪腰浸泡于水中,使猪腰渗出血水 。多换几次水将其中的血水置换出来 。
取红枣二粒,不用太多 。将红枣切成细块去掉枣核,备用 。
当归、枸杞、花旗参,清洗干净后放入炖盅加入适量水,备用 。
将置换掉血水的猪腰加入炖盅,加盖炖半小时;取出后加入适当调味,即可开吃 。其中的猪腰可分出醮生抽食用 。
猪腰胡椒蒸法
主料:猪腰200g、瘦肉100g
辅料:油适量、盐适量、姜适量、蚝油适量、生粉适量
