鲜和腥是一个味道吗

邀请我干嘛 因为名字里有海鲜吗?!既然被问了就认真答一下吧……其实鲜这个味道是否存在是有争议的,记得有些高加索人种无法品尝出鲜的滋味……且看维基百科Umami (其实是鲜的日文发音,后来变成英文了)的词条。Umami (/u?mɑ?mi/), or savory taste, is one of the five basic tastes (together with sweetness, sourness, bitterness, and saltiness). It has been described as brothy or meaty.People taste umami through taste receptors specific to glutamate. Glutamate is widely present in savory foods, such as meat broths and fermented products, and commonly added to some foods in the form of monosodium glutamate (MSG). Since umami has its own receptors rather than arising out of a combination of the traditionally recognized taste receptors, scientists now consider umami to be a distinct taste.其实就是谷氨酸的味道。而鱼腥味则是鱼类体内天然的氧化三甲胺在宰杀的过程中转化成氨气形成的。Fish tissue contains an odorless chemical known as triethylamine oxide. Once the fish is killed and exposed to air, the chemical breaks down into derivatives of ammonia, and therefore smells bad."

【鲜和腥是一个味道吗】 泥的味道可能就是没有煮熟,或者没有煮干净,鲜不等于腥,鲜不是仅存在于海鲜中。
你可能不是很喜欢吃海鲜,感受不到鲜味~
