Five types of soy sauce exist in Japan: koikuchishoyu (heavy flavour), usukuchi-shoyu (light taste), tamari-shoyu (dark colour and rich taste), saishikomi-shoyu (twice-brewed, with amuch stronger taste and darker colour), and shiro-shoyu (light colour and sweet taste). About 85% of all soy sauce manufactured in Japan is the first type, koikuchi-shoyu. A strong aroma and a deep reddishbrown colour characterise this soy sauce. It is also this soy sauce that is sold all over the world.
